For some reason pdflatex (and all the other tex binaries) are squirrelled away in /usr/share/texmf/bin on this machine and that wasn't in the PATH in the ledgersmb.conf. Adding that has solved it. Thanks very much for your help tracking it down, Erik. I can now crack on with going through the new templating guide and bringing all my old-style templates up to date.
