Quick, if inadequate, answer: it should work fine if you can print
Postscript to the printer (and it sounds like it will). I'd imagine
you might get best results using a large sans-serif font; since you
also, I think, need landscape paper format you might find this

I think the nub of your question is the text-mode question - the
LedgerSMB manual is at http://tinyurl.com/3mzatz [PDF] and states:
Receipt Printers: ESC/POS printers generally work in text mode.
Control sequences can be embedded in the template as necessary.
but I don't find further details. I'm sure someone else will be along
later with more information.
