Looks like the Outstanding report can be filtered by customer, and amount due can be added to the results.

From your description it looks like you are looking for the Outstanding and AR Aging reports under the AR -> Reports menu. Especially the Outstanding report also includes amounts paid. (AR Aging does not.)
