Are you thinking that one does a pg_dump of the tables and then edit them for consistancy prior to loading them into the new db?

You could do that.  Another trick is to do COPY table TO file WITH CSV;

Then that makes it easy to edit the data in a spreadsheet of your choice.  Then after db creation you can:
COPY table FROM file WITH csv;

And if the schema has changed, you can specify a column list.
